Five Strategies for Eating More Plant Food
These strategies are From Mark Bittman’s book “Eat Vegan Before 6 to Lose Weight and Restore Your Health….for Good”.
1. Buy them. The first step is to actually shop. Make a rough plan for the week, and then shop; you’ll have all the ingredients on hand.
2. Prep veggies so they are ready to eat. Wash and spin lettuce and keep it in the fridge. Cut up celery or carrots and store in the fridge. Wash fruit and put it in a bowl, or cut up melon and put it in a container.
3. Make big batches of grains and beans every week. Cooking beans and grains requires no effort. They keep in the fridge for 3 days.
4. Step Out of Your Comfort Zone. There is a whole world of fruits and veggies out there! Don't get stuck in a rut. Resolve to try at least one new plant a month, you’ll virtually never run out of options
5. Experiment with ways to make veggies exciting. Try roasting, grilling, sautéing, braising. Don’t be afraid of using some fat. Especially olive oil, spices and herbs. An ounce of bacon or parmesan goes a long way.
